1 (15oz) can ranchero beans (Grillin' Beans makes them but there's also one called Ranch Beans that's cheaper)
1 jar medium salsa
1 box Jiffy cornbread mix
1 egg
1 cup buttermilk (or soy milk)
Preheat oven to 400. Brown meat, add beans(undrained) and salsa and simmer for 5 minutes. Pour into a 9x12 casserole dish. Prepare cornbread using egg and buttermilk - you can add 1/4 cup sugar to the mix also if you want it sweeter. Pour on top of beef mixture. Bake 20-30 minutes or until cornbread is lightly browned.
